Every year, I look forward to peach season. I LOVE PEACHES! They are finally starting to hit the stores and farmer’s stands with their amazing flavor. I’m just a little giddy.
For the past week, I’ve been tossing freshly sliced peaches with bleu cheese and just eating them from a bowl. Something about the sweetness of the peaches with the umami of the bleu cheese is addictive.
I had been thinking about creating a salad around those flavors when the kids asked for burgers tonight for dinner. Inspiration hit. Burgers with black peppered bacon, bleu cheese, and some perfectly ripe peaches for a little sweet-tang.
Even the kids agreed…these were delicious! I think we’ve found our new favorite burger for this summer.
Georgia Black and Bleu Burgers
Time: 30 minutes
Makes: 4 burgers
3 pounds ground beef (75-80% lean. Do NOT use higher than 85% lean or your burgers will be dry. The fat is good.)
8 slices black pepper bacon, thoroughly cooked
4 slices Havarti cheese
4 brioche buns, split and lightly toasted
2 cups baby spinach, romaine, or arugula washed and thoroughly dried
thinly sliced purple onion
2 ripe peaces, washed, pitted, and thinly sliced
1 cup bleu cheese aioli (recipe below)
Bleu Cheese crumbles for garnish (optional)
Salt and Pepper
Shape ground beef into 4 3/4 pound patties. Salt and Pepper patties. Grill over medium heat until desired doneness is reached. I cook mine to medium.
Top patty with Havarti and allow to melt slightly.
On a plate, place toasted, split brioche buns face up.
Spread some bleu cheese aioli on both the top and bottom bun. Layer spinach (or other greens), burger with melted cheese, bacon, peaches, purple onion, and blue cheese crumbles (if desired).
Blue Cheese Aioli
Time: 5 minutes
Makes 1 cup
1 cup mayonnaise
1/2 cup blue cheese crumbles
2 tsp onion powder
1/2-1 tsp ground black pepper
Combine all ingredients in a small glass bowl. Stir until combined. Refrigerate for 1-2 hours before using (and up to 2 days before using) for flavors to combine.
