These past weeks of summer have been a conundrum for me. On the one hand, I LOVE Fall weather. Warm soups, pumpkin everything, cool breezes. But on the other hand…those things shouldn’t happen until SEPTEMBER at the earliest. I’m still wanting to lounge by the pool and soak up the rays.
There were no “rays” today though. It rained all. day. long. All day! And the temperatures never rose above the 60’s. And the dang supermarket has jack-o-lanterns out in front of the store…before school even starts…and my head is spinning!
Even with all of the seasonal confusion, we were happy to have a warm dinner of Italian Sausage and Bean Soup. This recipe has been one of our favorites since we lived in England nearly 6 years ago. One of our friends brought this recipe to a girls’ night, and I’ve made it OFTEN ever since. (Thank you Tessie Snow!!!!!)
Things I love about this recipe: It’s SUPER yummy and cooks up in a hurry. It’s perfect for the busy school nights when you’re running here, there, and everywhere between swim lessons, Scouts, and soccer teams. I love that you just throw in a few handy ingredients and voila! Delicious dinner is done! Serve it with some crusty french bread and a salad…and you’ve got a gourmet dinner in no time.
Italian Sausage and Bean Soup
Time: 30 minutes
Serves: 6-8 people
1 pound mild Italian sausage
1/2 cup onion, chopped
1 clove garlic, minced
1 can Great Northern beans, rinsed and drained
1 can black beans, rinsed and drained
1 can (14.5 oz) beef broth
1 can petite diced tomatoes, undrained
1 tsp dried basil
shredded Parmesan cheese (for garnish)
Remove sausage from skin (if using links). Place sausage, onion, and garlic in large, headed sauce pan and crush sausage with a potato masher as it cooks. Cook until the sausage is browned; drain away the fat. Add beans, broth, tomatoes, and basil. Cover and simmer for 10 minutes. Sprinkle each serving with Parmesan cheese. Serve hot!
